Anchovy Dip

This goes great with crackers, toasted bread or crudite.


1 cup of stale or frozen bread
80g anchovy fillets
1 tsp lemon juice
2 tbsp capers
¼ cup raw cashews
¼ cup white onion, roughly chopped
150ml extra virgin olive oil
Cracked pepper, to taste
1 tsp fresh parsley chopped, to garnish

  1. Briefly put the stale breadunder the faucet to moisten. Drain the bread well to remove excess water.
  2. Place the soaked bread, anchovy, lemon juice, capers, cashews, onions, olive oil and pepper in the blender. Blend the mixture until a smooth mixture forms.
  3. Place in a bowl and chill for at least 2 hours. Serve with parsley garnish.
