Artichoke Nibbles

Can be baked in a muffin tin instead of a greased pan.

Ingredients: 

2 6 oz jars marinated artichoke hearts (I use TJ’s which are roasted)
1 sm onion finely chopped
1 clove garlic minced or mashed
4 eggs
¼ c fine dry breadcrumbs
¼ t salt
1/8 t each pepper, oregano, Tabasco
½ lb sharp cheddar – shredded
2 T minced parsley

Drain marinate of 1 ½ jars in frying pan, drain rest.  Add onions & garlic to fry pan & sauté until limp, approx 5 min. Cool a little.  

Chop artichokes.

In lg bowl beat eggs w/fork, add breadcrumbs, salt, pepper, oregano, Tobasco. Stir in cheese, parsley artichokes & onion mix.  Turn into greased  7x11” pan.

Bake at 325 degrees for 30 minutes or until firm when lightly touched. 

Cool & cut into 1” squares.
