Artichoke Pesto Dip

Ingredients: 

Makes 1 cup or 8 (2 tablespoon) servings

1 (15-ounce) can artichoke hearts packed in water, drained
1/4 cup grated Parmesan cheese
2 tablespoons olive oil
1 tablespoon lemon juice
1 tablespoon chopped fresh parsley
1 small clove garlic, minced
3/4 teaspoon kosher salt
a few grinds black pepper
