Chicken, Chorizo and Chickpea Stew

Notes:

This is a cracking wee dish for this time of year. Just as we're starting to move into the slightly colder months little one pot wonders really come in handy. This dish still has a lighter depth of flavour to that of a boeuf bourguignon or a goulash so if the temperatures don't plummet (and hopefully they won't) it's still worth a rattle. This is a great way of using up tomatoes that are on the way out as well as some store cupboard chickpeas and it's a perfect time of year for squash. I made a big pot for 8 to 9 people. Split everything in half for a family of 4 to 5 or you can freeze individual portions for a quick post work dinner.
