1 cup quinoa
1 can (13 to 15 oz) coconut milk (regular or light)
1 cup water
1 teaspoon cinnamon
1 teaspoon vanilla extract
1 Tablespoon pure maple syrup
Optional toppings: bananas, berries, coconut flakes, sliced nuts, etc
