12 (2 1/4 pounds) ripe tomatoes
1 1/4 ounces white country-style bread (without crusts)
1/2 cup water
1/3 cup olive oil, plus extra to serve
2 tablespoons sherry vinegar
1 tablespoon mayonnaise
4 ounces croutons
