Creamy Oven Stew with Tofu, Cauliflower, and White Beans


THIS OVEN STEW IS A HEALTHY ALTERNATIVE to rich, cream-based sauces and soups. It's packed full of cauliflower and silky tofu, with a crunchy topping of golden bread crumbs. This is great served over rice. • Serves 6


1 pound firm tofu, rinsed
2 tablespoons reduced-sodium soy sauce
1 tablespoon rice vinegar
1 teaspoon paprika
Olive oil
4 cloves garlic, minced
1 small onion, diced
2 large stalks celery, diced
1 head cauliflower, cut into small florets
¼ cup all-purpose flour
1½ cups milk
One 15-ounce can white beans, such as Great northern or cannellini, rinsed and drained
1½ teaspoons salt
Freshly ground black pepper
⅔ cup dry bread crumbs
