Danish Pastries (make ahead) (bread machine dough cycle)

Notes: 

Makes 24 pastries
Before shaping the pastries, select your filling(s). We like to use a variety. Either of the filling suggestions in this recipe make enough to fill all the pastries; so if you want to mix and match, make a half-recipe of the cheese filling, and use only half the amount of fruit filling called for.

Ingredients: 

FOR THE DOUGH:
1/2 cup water
3/4 cup milk
2 egg yolks, cold (reserve whites for glaze)
2/3 cup butter, cool and cut into pieces
1/4 cup sugar
1 teaspoon salt
4 cups flour
1 tablespoon active dry yeast (or 2 teaspoons quick rise or bread machine yeast)
FOR THE PASTRIES:
fruit filling, jam, or preserves or cheese filling
CHEESE FILLING
1/2 cup cream cheese
1/2 cup cottage cheese or ricotta cheese
3 tablespoons granulated sugar
1 large egg
1/4 teaspoon salt
