1/2 cup plus 2 tablespoons kosher salt
One 2-pound skin-on center-cut salmon fillet, pinbones removed
2 tablespoons pink peppercorn
2 tablespoons caraway seeds
2 tablespoons coriander seeds
2 tablespoons fennel pollen
1 teaspoon freshly ground white pepper
1/4 cup sugar
1 large bunch of dill
Rye crackers, sour cream, sliced onions and drained capers, for serving
