Fried capellini cakes are SO yummy! I had them in a restaurant on Long Island, NY and I want to try making at home. This recipe sounds like it may be the one! I'll keep you posted if it works out!
1 lb. capellini pasta, cooked, drained and run under cold water.
22 - 30 oz. ricotta cheese
1c shredded mozzarella cheese
1c grated Parmesan cheese
Italian seasonings (in a jar)
1/4 lb. domestic prosciutto, remove fat an cut into 1/2 inch by 1/2 inch pieces
Progresso Panko with Italian seasonings
marinara or tomato sauce for dipping
vegetable oil for frying
