General Tso's Fried Tofu

Notes: 

I love fried tofu and I love General Tso's and I love this too! Tip: wrap the tofu in paper towels and squeeze out excess water before cutting. By cutting into thin strips it makes it much easier to fry, you simply fry on two sides much easier than six sided cubes!

Ingredients: 

1 (16 ounce) box extra firm tofu
1 egg
1/2 cup cornstarch
1/4 cup cornflour or (1/8 flour 1/8 corn meal)
vegetable oil (for frying)
3 chopped green onions
1 tablespoon minced ginger
1 tablespoon minced garlic
2/3 cup vegetable stock (or chicken stock)
2 tablespoons soy sauce
4 tablespoons brown sugar
pinch of red pepper flakes
1 tablespoon sherry wine
1 tablespoon rice wine vinegar


1)Remove tofu from the package and place it on a plate with a weight on top, we use a bacon press. After a half hour drain of excess liquid and repeat until the water is gone.Pat dry and cut tofu into 1/4" thick slices, then dry them again on paper towels to get the tofu super dry!
2) Mix egg with 3 Tbs of water.
3) Dip tofu in the egg mixture.
4) MIx corn flour,cornstarch in a bowl and dip tofu to thoroughly coat. let rest 10-120 minutesd before frying.
5) Heat oil in pan to medium high and fry tofu pieces until golden brown on each side (do not move around, allow the tofu to brown completely before turning.
6) Drain oil from tofu on paper towels.
7) Heat chicken/vegetabble stock in a wok and add onions, ginger and garlic, cook for about two minutes.
8) Add  soy sauce, brown sugar, red pepper flakes and vinegar and sherry.
9) Mix 2 Tbs of water and 1 Tbs cornstarch and pour into mixture, stirring well. Bring to a boil to thicken.
10) Add fried tofu and coat evenly. Add sesame seeds to garnish abd serve over white rice

It gets better every time we make it. One simple trick, make sure you get the Tofu super dry before your coat it and fry. A guiltless pleasure!
