Grandma's Meatballs (Polpette di Nonna)

Ingredients

  • 2 pounds of ground beef
  • 4 –5 slices of bread, crust removed, cubed and soaked in 1/3 cup of water
  • 2 tablespoons Italian flat leaf parsley, minced
  • 3 fresh basil leaves, torn in small pieces
  • 1 tablespoon chopped chives (optional)
  • salt and freshly ground pepper to taste
  • ½ teaspoon garlic powder
  • ½ cup grated Romano cheese
  • 2 eggs
  • 2 tablespoons plus olive oil for sautéing the meatballs, plus 1 tablespoon for sautéing the onions.

Directions

  1. In a large bowl combine the ground beef, salt, pepper, garlic powder, chives if used, parsley, basil Romano cheese, bread and eggs.
  2. Blend well. With wet hands shape into meatballs of desired size and roll each one until smooth.
