2 green onions/scallions
¾ lb (12 oz, 340 g) thinly sliced beef (chuck or rib eye)
1 Tbsp. oil
2 tsp. sugar
2 Tbsp. sake
2 Tbsp. mirin
1 Tbsp. soy sauce
3 large eggs (optional), beaten
3 cups cooked Japanese rice
