Herbed Chicken Leg Quarters with Mushroom Sauce

Ingredients: 

4 cloves garlic, finely minced1 Tablespoon rosemary2 Tablespoons thyme2 teaspoons onion powder2 teaspoons salt (more to taste)freshly ground black pepper2-3 Tablespoons olive oil, plus more for baking dish (use the least expensive kind in this situation since you’re roasting)4 chicken leg quarters, about 3-4 pounds totalPreheat oven to 375 degrees.  Lightly coat the bottom of a 9x13 baking dish (I use glass) with a small amount of olive oil.  Arrange chicken in dish, tossing to coat all sides in the olive oil.
