Lemongrass Beef Lo Mein

Ingredients: 

1/2 LB sliced stir-fry beef
1/4 C soy sauce
2 TBSP fish sauce
2 TBSP minced lemongrass
2 TBSP brown sugar
1 TSP sriracha sauce (optional)
2 shallots, sliced
1 red bell pepper, sliced
1 C snow peas (or other veggie of choice), rinsed and stemmed
6 oz lo mein noodles
1 bunch scallions, sliced
Canola oil for cooking
Sesame seeds for garnish


Directions

  1. Combine soy sauce, fish sauce, lemongrass, sugar and sriracha sauce in a mixing bowl.  Whisk together and add beef strips. Set aside and marinate for 30 minutes.
  2. Cook noodles according to package directions, rinse with cold water, and set aside.
  3. Heat a large skillet over medium heat with 1 TBSP canola oil.  When hot, add shallots and cook until golden brown and slightly caramelized, 5-7 minutes.  
  4. Add beef and marinade to skillet and cook, stirring frequently, until beef is browned and sauce is uniformly bubbling, about 2-3 minutes.
  5. Add peppers and veggies, alon with cooked noodles, and cook, stirring frequently, until just tender, about 3 minutes.
  6. Remove from heat and toss with scalloins.  Top with sesame seeds and serve.
