Little Earthquake Cupcakes

Ingredients

  • 1 Box German Chocolate cake mix
  • 3 eggs
  • 1 c milk
  • 1 c shredded coconut
  • 1 c pecans
  • 4 tbsp buttter
  • 1/2 pkg (4 oz) cream cheese softened
  • 2 c powdered sugar

Directions

  1. Mix cake mix, eggs, milk. In a separate bowl, combine coconut and pecans. Divide and scatter nut mixture evenly in teh bottom of each paper.
  2. Cream together melted butter cream cheese, and powdered sugar in large bown.  Beat until ight and smooth
  3. Pour chocolate batter on top off the nut mixture.  Filling each paper to 2/3 full.  Place a spoonful of  cream cheese mixture on top of the cupcake.
  4. Bake 350 for 15-18 minutes.  Topping will seem a little wobbly, but the cupcake will set as it cools.  Remove cupcakes ffrom teh oven and place on a rack until completely cool.  Dust with powdered sugar before serving
