Moma's dressing

Ingredients: 

Cook whole hen or roaster hen
Deskin and Debone hen
Save juices and water from hen being boiled for dressing and giblets gravy
Make cornbread (Martha white w/buttermilk cornmeal) make according to package directions
Boil 3-4,eggs
While icornbread is cooking: Chop celery, onion and boiled eggs,(as many as u want)
When cornbread is done add
Rubbed sage to taste while cornbread is hot(Moma says It will take alot)
Salt and pepper to taste
And juices from boiled hen to a thick consistency
Add all of he meat except a liitle for gravy
Bale at 350 covered with aluminun foil until onion and celery are done. Then uncover and brown the top. If it's too dry add more juices. If it's too moist cooking uncovered will dry it out a little

Giblets gravy
Take remainder of hen juice and add boiled eggs 1-2 , a little finely chopped celery cook until celery is tender
Then turn stove eye down and add flour to thicken a little at a time.
