Mung Bean Potstickers

Ingredients: 

1 cup dry mung beans, soaked in water for about 4 hours

½ inch piece of ginger

1 clove of garlic

3/4 cup vegetable oil

6 spring onions or scallions white and green parts, thinly sliced

1 tbs. siracha

2 tsps. sugar

1/4 cup soy sauce

2 tbs. water

1 tsp. rice vinegar

8 shallots, peeled and chopped

3 tbs. sesame oil

1 package round potsticker wrappers

About ½ cup flour, for making dumplings

Toasted sesame seeds for garnish
