New York Style Pizza Dough

Notes: 

This is an actual Pizzeria recipe scaled down for home use. Be sure to check out the website and thoroughly read the tips to fully understand how to do it right. We use a pro Kitchen Aid mixer for best results. It's actually painfully easy just follow the directions. I have also frozen the individual dough fro weeks at a time with great success!

Ingredients: 

6 1/2 cups bread flour
2 1/4 cups cool water
1 teaspoon of Instant dry yeast (not a whole pkg!)
2 1/2 teaspoons salt
2 teaspoons sugar
3 teaspoons olive oil


  1. Combine flour/salt/yeast/sugar in the mixer and mix well, making sure everything is well incorporated
  2. Add cool water and continue mixing
  3. Add oil at the very end
  4. Kneed dough by hand for about 4 minutes until dough is smooth
  5. Cut dough into 4 equal pieces and place in individual 1 qt plastic bags
  6. refigerator at least 24 hours up to 48 hours, dough will not rise much
  7. Take dough out of the refigerator at least two hours before using.
  8. Open each dough ball do not use a rolling pin, hand stretch and toss.
  9. Bake in hot, hot over 500+ for six minutes
