Nyonya shrimp and pineapple curry #FishFridayFoodies

Ingredients: 

For paste -
2 large shallots, peeled and roughly chopped
3 cloves of garlic, peeled and roughly chopped
1½ - 2in/5cm piece ginger, peeled and roughly chopped
2tbsp raw cashews
2tbsp minced lemongrass (I used pre-prepared)
2 (or more, to taste) hot red chilis, top removed, deseeded and roughly chopped
½tsp turmeric powder
1tbsp soy sauce
For rest of dish -
1tbsp vegetable oil
2x 8oz (227g) can pineapple chunks in pineapple juice
¾ cup/180ml coconut milk
¾lb/350g fresh or frozen and defrosted de-veigned (shell off) shrimp/prawns
