Ingredients: 

for the crust:
1 1/4 c all-purpose flour
1 1/2 tsp granulated sugar
1/2 tsp salt
1/2 c or 1 stick vegan butter, cubed and chilled
4 to 6 Tbsp ice water
for the filling:
2 large peaches, pitted and sliced into 1/4" slices
3 Tbsp granulated sugar
1 Tbsp all- purpose flour
1/2 tsp vanilla extract
1 tsp vegan butter
for egg wash:
1 flax egg
2 - 3 Tbsp granulated sugar for sprinkling
