Peppadew Peppers Stuffed with Goat Cheese

Ingredients: 

Spice Mix:
2 tablespoons sesame seeds
2 teaspoons ground cumin
1 1/2 teaspoons paprika
1 teaspoon finely chopped fresh thyme
1/4 teaspoon coarse kosher salt
1/8 teaspoon ground black pepper


I make this spice mix and store what I don't use in a baggie in my fridge - it lasts awhile and I throw it into a lot of recipes.

You can buy the peppadew peppers in the olive bar at our Whole Foods. I think you can find the jarred version at a lot of grocery stores.

I take some goat cheese and mix in the spices to taste. Then I roll little balls of goat cheese and stuff them inside the peppers. And that's about it :)

If you are serving at home and want to take it up a notch, you can drizzle a balsamic reduction over the top sprinkle with some minced italian parsley.
