Pot Roast Tacos with Fresh Salsa

Notes: 

Any old leftover beef will make a delicious taco. I've made this with leftover pot roast, steak, and roast beef. The fresh salsa makes this incredible. You can't go wrong. Feel free to experiment with the salsa, adding more or less ingredients as you desire.

Ingredients: 

- Leftover pot roast
- Fresh salsa (recipe below)
- Corn tortillas
- Paprika to sprinkle
- Sour cream for garnish
- Shredded cheese for garnish
- Sliced avocado for garnish
- Extra cilantro and onions for garnish too
FOR THE SALSA
- A medium tomato chopped (or a 14oz can of quality diced tomatos)
- a small red onion finely chopped (about 1/2 or more of a cup)
- 1 Jalepeno pepper finely chopped (or other chili variety.)
- A bunch of fresh cilantro leaves, washed & finely copped
- 2 limes, juiced
- 1 teaspoon of sea salt (more if desired)
- 1/2 teaspoon of cumin powder
- Pepper to taste


  1. Warm up your corn tortillas. Wrap them in aluminum foil and put into a warm oven for 5 minutes or so.
  2. Warm up your leftover pot roast or roast beef.
  3. Make your salsa. Combine all the ingredients in a bowl. Taste your salsa and add more lime juice and / or salt to taste.
  4. Get all your garnishes ready for taco assembly.
  5. To assemble a taco simply place a corn ortilla on a plate, add a small lump of beef, some salsa and other desired garnishes... and serve.
