Pumpkin Brown Rice Pudding

Ingredients: 

2 cups water
1 cup short-grain brown rice
3 cups low-fat milk (2 percent)
1 cup canned pumpkin puree
2/3 cup pure maple syrup
1 teaspoon vanilla extract
3/4 teaspoon ground cinnamon, plus more for garnish
1/4 teaspoon ground ginger
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon salt
Splash of heavy cream or milk, or whipped cream, for serving (optional)
