Ingredients

For cake:
1/2 cup canola oil
1 cup sugar
2 eggs
1 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/8 teaspoon ginger
1/8 teaspoon nutmeg
1 cup pumpkin purée, fresh or canned

For cream cheese frosting:
4 tablespoons unsalted butter, softened
4 tablespoons cream cheese, softened
1 cup powdered sugar, sifted
1/2 teaspoon vanilla extract

For cake pops:
2 (8-ounce) containers of candy shell, such as Dolci Frutta creamy white shell
24 wooden or bamboo skewers (barbecue skewers) or wooden popsicle sticks
