Pumpkin Dhal

Ingredients: 

2 tblsp olive oil
1 brown onion, finely chopped
2 cloves garlic, finely chopped
1 tsp fresh ginger, finely chopped
1/2 tsp turmeric
1 tsp cumin seeds
400g pumpkin, diced
3/4 cup fresh coriander, chopped
3 cups water


Directions

  1. Saute onion, garlic, ginger, turmeric and cumin seeds in oil for 5 minutes, stirring constantly. 
  2. Add pumpkin, lentils, spinach, coriander and water. 
  3. Cover and simmer for 1 hour, stirring regularly.

Tips / Substitutes: 

Make a double-quantity and freeze some for later.

1 butternut pumpkin provides 800-1000g. 

Servings: four
