I also made some caramelized onions with apple chunks as a kind of slaw to put on top.
Pork loin, 2 lbs
Salt
Paprika
Thyme
Cayenne
Chile powder
Pepper
Olive oil
Preheat oven to 425
Combine spices and oil. Rub over loin.
Place loin in roasting pan, fat side up.
Roast for 10 minutes at 425, then lower heat to 250 and roast for around 75 minutes. You can check the texture by poking it and gauging resistance; or use a meat thermometer to confirm it's done. Remove and let continue cooking for 5 to 10 mins. Carve and serve.
It goes great with caramelized onions made with a few apple chunks.
