Roasted Brussel Sprout Quinoa Bites stuffed with Gruyere

Ingredients: 

3 cups brussel sprouts, sliced
1 tablespoon olive oil
1 tablespoon balsamic vinegar
2 cups quinoa, cooked
1 cup northern beans, mashed
1 1/2 cups panko bread crumbs
3 eggs, beaten
1 cup mozzarella, grated
1 cup gruyere
1 cup buttermilk
salt and pepper to taste
