Roasted Sweet Potato Dip

Notes: 

Roasting the vegetables yields a dip with rich flavor. You can make this ahead and serve it chilled with raw veggies, such as celery sticks, broccoli, and cauliflower.

5 cups peeled and chopped sweet potatoes (about 1½ pounds)
2 cups chopped carrot (about 4 medium)
1 cup chopped onion
1 teaspoon olive oil
1/4 cup sesame seeds
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
