Salad: Asian Slaw

Ingredients: 

2 cups green cabbage; shredded
4 cups purple cabbage; shredded
2 carrots; grated
1 large red bell pepper; finely diced
6-8 green onions; diced
1 broccoli crown; finely diced
¼ cup cilantro
½ toasted almonds
1-3.5 oz packaged of fried wonton strips (optional)

Dressing
1 tbsp sesame oil
2 tbsp soy sauce
3 tbsp rice vinegar
2 cloves - 1 tablespoon garlic; pressed or minced
½ tablespoon fresh or ¼ ground ginger
zest and juice from one lime
2 tablespoon mirin
1 tablespoon honey
1 tsp Sriracha +/- to taste (optional)
¼ tsp black pepper
Salt to taste


  • In a large bowl, mix the cabbages, carrots, green onions, cilantro, bell pepper and broccoli together.  Set aside.
  • In another bowl, add all the dressing ingredients and whisk until blended. 
  • Once blended, quickly pour over the mixed veggies and toss. 
  • Once the dressing has coated the slaw, serve immediately or cover and chill.
  • Before serving, mix in half the almnds and sprinkle te remaining on top.
  • If using wontons, when serving, top with the fried wonton strips. Do not mix the wonton strips in until serving or they will be soggy.
