Ingredients: 

2 3/4 pounds skinless, boneless chicken thighs
Kosher salt and freshly ground pepper
1 1/2 tablespoons canola oil
3 garlic cloves, minced
2 tablespoons minced fresh ginger
1 onion, cut into 1/2-inch dice
2 tablespoons Madras curry powder
1/2 cup low-sodium chicken broth
2 baking potatoes, peeled and cut into 1-inch dice
1 small head of cauliflower, cut into 1 1/2-inch florets
One 15-ounce can unsweetened coconut milk
3/4 cup frozen baby peas, thawed
1/3 cup coarsely chopped cilantro
