Slow roasted tomato, caramelized onion and goat cheese tart

Ingredients: 

For the Pastry Shell:
1 1/3 cup plain flour or whole wheat pastry flour
1/2 teaspoon kosher salt
8 tablespoons unsalted butter
1 egg, lightly beaten
1-2 teaspoon ice water

For the tart filling:
10 on the vine tomatoes, cut in half horizontally
5 sprigs fresh thyme
1 tablespoon olive oil
1 large onion, thinly sliced
1 garlic clove, finely chopped
8 ounces soft rindless goats cheese
a few basil leaves, to garnish
Extra virgin olive oil, to serve
