Strawberry/ Blueberry Cream Cheese Pie


Wonderful with just about any berry you like. It's very easy and sets in the refrigerator in a few hours.If using a store bought regular size graham cracker crust, Cut the recipe to 1 & 1/2, 4oz cream cheese and 3/4 cup sugar. See our graham cracker crust recipe to make your own.


Deep dish pie crust we prefer graham cracker but any crust will do.
1 +/- pounds of strawberries or two pints blueberries
2 4 oz pkg of cream cheese
1 cup sugar
1 tablespoon of vanilla
1 tablespoon lemon juice
2 tablespoons of cornstarch

If using a standard pie crust just cut the recipe by half

  1. Hull strawberries reserve 1/2 and rough cut the rest, crush the strawberries (or better yet run them in a food processor) and cook over medium heat until a sauce forms
  2. Add cornstach disolved in a bit of water and bring to a boil to fom a thick sauce. Let it cool a bit and then add the balance of the cut strawberries.
  3. In a bowl with a mixer ad softened cream cheese, sugar and flavoring and beat until smooth..
  4. Pour of the Cream cheese mixture in the crust and carefully smooth it over.
  5. Pour sauce and berries evenly on top.
  6. Cover and refigereate for at least 3 hours.

Just made the blueberry version with homemade graham cracker crust, it's even better than the strawberry version!!
