Sweet Chili Lime Shrimp Tacos

Ingredients: 

1 LB raw shrimp, peeled and de-veined
3 limes
1/2 TSP chili powder
1/4 TSP garlic powder
2 TBSP brown sugar
1 yellow onion, thinly sliced
1 bell pepper, thinly sliced
2 ears of sweet corn, sliced off of the cob
1 small head cabbage, sliced in to thin shreds
2 ripe avocados
1/2 C full-fat Greek yogurt
12 small corn tortillas


Directions

  1. Juice two of the limes into a medium-sized bowl. Add chili powder, garlic powder, and brown sugar and whisk until sugar is dissolved. Add shrimp and toss to coat.  Set aside to marinate for 10-15 minutes (and no longer than 30 minutes).
  2. Heat about a tablespoon of canola or other vegetable oil in a medium skillet over medium heat. Add onions and cook until lightly browned, about 5 minutes
  3. Add bell pepper and cook until just soft, an additional 2-3 minutes.
  4. Add shrimp and marinade to pan and cook until shrimp are cooked through and most liquid has reduced, about 3-4 minutes depending on the size of the shrimp.
  5. Add corn to pan and toss.  Reduce heat to warm and cover.
  6. Peel and slice avocados in to eighths.
  7. Nuke tortillas in the microwave for 30-45 seconds.  Slice remaining lime in to eighths.
  8. Top each tortilla with a handful of cabbage, a scoop of the shrimp mixture, a slice or two of avocado and a dollop of yogurt. Serve with lime wedges.

Servings: Makes 12 small tacos (about 4 servings)
