Sweet Potato Pecan Pie

Ingredients: 

3 eggs
3/4 cup sugar
1/2 tsp salt
1 cup light corn syrup
1 Tbsp melted butter
1 tsp vanilla extract
2 cups of roasted and mashed sweet potatoes (about 1lb of sweet potatoes)
1 cup of chopped pecans
One 9" pie shell


  1. Mix egg, sugar, salt, corn syrup, butter, and vanilla. Whisk until smooth and frothy.
  2. Spread mashed sweet potatoes in pie shell and then add pecan pieces on top.
  3. Pour the egg mixture on top and bake at 350 degrees for one hour or until filling is set. 
  4. Let cool for 30 minutes and then serve warm.
