1 300g bag rice noodles-place in lg bowl and cover with boiling water. Cover with a plate, set aside
Sauté cup of peanuts with large sprinkle of sesame seeds and 3 ?kafee leaves scrunched into it
Dressing
Put into a food processor & pulse
1 whole chili-take off stalk
Peel about a 1" piece of ginger
1/2 bunch basil
6 or 7 cherry tomatoes
2 tbsps sesame oil
3 tbsps fish sauce
Juice 3 limes
1tsp unrefined sugar
Take out chopper blade and put on slicer attachment
Add 2 carrots, ends off but don't have to peel if clean
Cucumber, radish,fennel,white cabbage
Dump out into large dish and toss, mix well with your hands
Add 100g cooked prawns
Drain, Add cooked noodles, mix again
Add the leafy part of a bunch of mint-chop crudely
Add 1 block of silky tofu-just score it on top of the salad
Add tbsp sweet chili sauce
Squeeze in juice of a lime and garnish with some lime wedges
Add nuts over the top
