Thai-Spiced Squash and Coconut Soup

Ingredients: 

1 squash, cored and cut lengthways into 6 slices
olive oil
salt, to taste
pepper, to taste
1/2 c shredded coconut
3/4 c water
5 tbsp curry paste
2 c chicken stock
cilantro, chopped, for garnish
