Vegetable Stew

Ingredients: 

1.5 cups frozen vegetables
7-8 cups of vegetable broth
1 small can of tomato paste
2 zucchinis, chopped
1 red pepper, chopped
1 can mushrooms, drained
1 large sweet potato, peeled and diced
3/4 cup quinoa, drained and rinsed
1 can of chickpeas, drained and rinsed
1/2 teaspoon freshly ground black pepper
1 teaspoon paprika
2 cloves garlic, minced
1 teaspoon PC sun-dried tomato seasonings (optional)
2 bay leaves
Sea salt, to taste
