Cooked a 4 pound chicken at about 275 for 3.5 hours. Added grated lemon rind, subtracted white pepper, onion powder, and garlic powder. Didn't marinate overnight. Found this to be a really tasty rub! And chicken came out nice and moist. I flipped chicken halfway through to try to make a bit moist. Might use a touch less salt next time.
