Oh these are good. A bit time consuming with the melting of the chocolate and all, but a nice chewy interior with a crisp outer edge.
Sort of like a florentine, but much easier to assemble and thus not as complex in flavor. Still a very good cookie, comes together quickly and can be a show stopper at the right party : -)

First time making this kind of cookie, you're thinking it's not gonna pull together and suddenly it does.
I dunked mine in powdered sugar at least 3 times and actually stored it with them and gave a final coat before serving.

Quite crispy and very flavorful. The ginger is not overpowering but has a delicious lingering flavor.

Chop the pecans VERY FINE. The finer the better really because you'll get more adhesion on the cookies.
This recipe takes a while, only in the reducing the cider to less than 1/2 cup, once that's complete the whole process took less than 10 minutes.
I made the cider reduction the day before to about one cup and then did the final reduction the morning of the candy making.
These are delicious, buttery and a wonderful smell and taste of apples.
Will definitely make again.
