2 lb bag of frozen Skinless Boneless Chicken Thighs, mostly defrosted and cut in 2 inch cubes
1 can pineapple chunks in it's own juice.
1/2 red bell pepper-chopped
1/2 green or yellow bell pepper-chopped
1 onion-diced
1 tsp canola oil
1 tsp finely minced garlic
2 tablespoons rice vinegar
3 tablespoons gluten free ketchup
2 tablespoons low sodium GF soy sauce- I buy Targets brand
1 teaspoon pure GF ground ginger
1 teaspoon pure GF garlic powder
1 teaspoon pepper
2 tablespoons cornstarch dissolved in 1 cup water - I use Argo
2 teaspoons Stevia-opt (the pineapple gives it sweetness too)
