Zucchini Bread

Ingredients: 

3 cups shredded zucchini
1 2/3 cups sugar
2/3 cups vegetable oil
2 teaspoons vanilla
4 eggs
3 cups all-purpose flour or whole wheat flour
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon baking powder
1/2 cup chopped nuts


Heat oven to 350 degrees.  Greese bottom only of 2 loaf pans.  Mix zucchini, sugar, oil, vanilla, and eggs in a large bowl.  Stir in the remaining ingredients.  Pour into pans.  Bake 50 to 60 minutes or until golden brown and a pick comes out clean.  Cool 10 minutes.  Cool completly before removing from the pan or slicing.
