10 Calorie Crust-less Veggie Quiche

Notes: 

We LOVED this! Super light and surprisingly filling! Original recipe called for 3 large eggs and 3 egg whites. We make it with 6 egg whites and don't miss the egg yolk at all.

Ingredients: 

1 and 1/2 cups sliced yellow squash (2 small or 1 very large)
1 and 1/2 cups sliced zucchini (2 small or 1 very large)
1 large orange bell pepper, chopped (or any color)
2 cloves garlic, minced
1 Tablespoon ground thyme (or fresh chopped)
6 large egg whites
3/4 cup milk*
3/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
2/3 cup shredded cheese*
2 Tablespoons grated parmesan cheese
