The 8 Ball burger – makes 4

Meat mix
600 grams of good ground 80/20 beef
1 medium red onion finely diced
100 grams freshly grated Parmesan cheese
1 tbs paprika
1 tbs garlic salt
2 tps Cayenne pepper
50 grams crackers crushed
2 egg yolks
2 tps cracked black pepper
2 big squirts ketchup
