Almond Meal Pancakes with Peanut Butter Syrup

Ingredients: 

Pancakes:
1 cup flour (whichever kind you prefer)
1 cup Almond Meal
2 tablespoon sugar
4 tablespoons baking powder
1/4 teaspoon salt
2 cups soy/rice/almond/coconut milk (whichever you prefer)
4 tablespoons vegetable/olive oil

Syrup:
1 part peanut butter or any nut butter
1 part maple syrup
(may need to play w/ the ratio as it melts)


Directions

  1. Combine all pancake ingredients and fry in a good pan w/ vegan butter, or by preferred method.
  2. Combine the nut butter and maple syrup in a small sauce pan and melt until desired texture is acquired.
  3. Add FRUIT! (Strawberries, Blueberries, Bananas)

Tips / Substitutes: 

Servings: Enough for the family

This looks great! Out of curiosity, why do you use the almond meal? more protein? more flavor?

Hi Phil, wow, I was wondering how I had a follower already w/ no pictures on my recipes, and then I realized you are the creator of Keep Recipes. I was actually just keeping things here so I could throw away my paper recipes, and only save the ones that my family likes to eat.

The Almond Meal was somthing that is left over when I make Almond Milk, and it is often substituted in baking recipes for part of the flour just to add protein, fat, and probably flavor. Eating Vegan can be so challenging sometimes, that it's nice to discover new things and fill out each recipe to just get more nutrition out of it. The Peanut Butter Syrup was actually my favorite part of this, and it was actually really filling.
