Aloo Gobi

Consider changing it up with chicken, sweet potatoes, and broccoli in place of chickpeas, white potato, and cauliflower.

Ingredients: 

Canola oil spray
1/8 t. black mustard seeds
1 c jasmine rice
1/2 medium onion, thinly sliced
15 oz can chickpeas, drained and rinsed
1/8 teaspoon ground tumeric
1/2 t. ground cumin
1/2 t. coriander
3/4 t. garam masala
1 t. fresh grated ginger
1/2 sugar
2 tomatoes, chopped
2 handfuls of fresh baby spinach leaves, chopped
1 potato cubed
2 cups cauliflower florets


  1. Preheat oven to 450F
  2. Spray inside and lid of dutch oven with canola oil
  3. sprinkle the mustard seeds int he bottom of the pot.
  4. Rinse the rice in a strainer under cold water until the water runs clear.
  5. Tip the rice into the pot and spread in an even layer. Add 1 cup plus 1 T. water
  6. Scatter on the onion and evenly spread the chickpeas on top.
  7. In a small bowl, mix the tumeric, cumin, coriander, garam masala, ginger, and sugar.
  8. Fold in the tomatoes and spinach and pour half the mixture over the chickpeas.
  9. Create a layer of potato and then a layer of cauliflower. Pour the rest of the tomato mixture over all.
  10. Cover and back for 45 minutes.
