Amazing Miso Dressing & Marinade

This is the BEST marinade or dressing I've ever made.  I'm going to use this on poached salmon, on salad, on chicken, on everything.  It was 100% inspired by Chef Kenji Lopez-Alt's recipe. Above you can see it on a white fish that I marinated, baked then broiled. Best part about this marinade? I didn't measure anything and it still came out awesome.


  • 1/4 cup white miso paste
  • 2 tablespoons sake or white wine
  • 1 tablespoon sugar
  • 1 tablespoon brown sugar
  • 1 tablespoon soy sauce
  • 2 tablespoons olive oil


  1. Whisk all ingredients together.

Tips:  If marinading, marinade for 2 - 6 hours. You can cook with the marinade on. Could also add scallions or ginger.

Servings: Sufficient for 3-4 salads or 2 fish fillets of 8oz

Preparation Time: 6 minutes
