3 c white wine
5 bay leaves
2 cloves garlic, crushed
2 lemons

1 lb. calamari, cleaned and cut into rings (optional, if not using add more shrimp or scallops)
1 lb. medium shrimp, cleaned and deveined
1 lb. scallops

1 ½ c chopped celery
1 c black olives (optional)
1 c extra virgin olive oil
½ c lemon juice
3 large garlic cloves, thinly sliced
¼ c chopped parsley
dash red pepper flakes
salt & pepper to taste
