Apple Cider Caramels

It takes between 45-55 minutes to reduce the cider

Ingredients: 

4 cups apple cider
1/2 tsp. ground cinnamon
2 tsp. flaky sea salt
1 stick unsalted butter, cut into chunks
1 cup granulated sugar
1/2 cup packed light-brown sugar
1/3 cup heavy cream
Neutral oil, for the knife

This recipe takes a while, only in the reducing the cider to less than 1/2 cup, once that's complete the whole process took less than 10 minutes.

I made the cider reduction the day before to about one cup and then did the final reduction the morning of the candy making.

These are delicious, buttery and a wonderful smell and taste of apples.

Will definitely make again.
