Apple Pulled Pork


Serves 4-6.


1 lb pork tenderloin
2 tsp salt
½ cup unsweetened almond butter (or an extra cup of apple pureed in a blender or food processor)
¼ cup apple cider
½ large onion
2 apples
½ cup coconut sugar
2 stalks celery
¼ cup apple cider vinegar
1 tbsp Worcestershire sauce (gluten-free)
1 tbsp Dijon mustard
